Take A Chance!



I personally like to think of LIFE as a one-way street - you are supposed to stay within the lines, heading towards one direction, you may hit some potholes or head over some hills, but eventually, you'll get to your destination. I often wonder what everyone else thinks LIFE is compared to...


Throughout my personal life, I have been offered so many opportunities and I try my best to take every single one. I'm currently twenty years old and have been offered to give speeches, have my poetry published, asked to be a writer for a magazine, asked that my photos be publicly displayed, and most importantly, I have been recognized. No, I am not a famous poet, photographer, or artist, but I have fame in my own way.


Never in my life did I think I would be twenty years old and married, let alone move 3,500+ miles away from "home," or have the opportunities given to me that I've accepted. People go through life every single day caught up in the events they often call the "could of, would of, should of's" but not many people can say they've taken a  chance and it happened to be the best thing that's happened to them!


Now, I don't know if it's because I always try to seek the best in every situation, or because I like to think of the positive outcomes rather than the bad but, there has never been a moment where I have immediately said "no" to an opportunity that has come my way. So, if you're someone who's reading this blog that has something just hovering over your shoulders that you've been debating on for a while, GO FOR IT


You may be someone who has the opportunity to go to a college that is a few states away from your family, or the opportunity to transfer to a new job that you've never done before, or the opportunity to have your work published in a place you never thought it would be, or the opportunity to try something you've NEVER done before... TAKE IT! What is holding you back? Is it the fact that you'll be a few states away from your loved ones? They're just a plane, train, or car ride away! Is it the fact that you're transferring to a new job or a new location and you're nervous that you won't know anyone? You meet people every single day of your life and honestly, the people you're "friends" with now may not even be there for the rest of your life! The ones that matter will be the ones that stick with you, no matter what choice you make!


Take the new opportunity; take the chance, because you never know when a moment like this will come around again! Just think about it, if you take this once in a lifetime chance, you'll be looking back - years later - saying, "it was the best decision" instead of "I wish I took the opportunity when it was handed to me."


I say whatever decision you have in your life right now, GO FOR IT! What's the worst that can happen, this opportunity wasn't what you expected? So what, a new one will come around!! Like they say, "when one door closes, another one opens."

For My Dear Friend...

Each year there are thousands of babies who pass away from an illness that has overtaken their lives. A good friend of mine whom I've known since elementary school contacted me the other day and let me know that she has lost a baby in her family due to an illness. It struck me at that time that people every single day often overlook children, adults, diseases, and sicknesses. You never know when your "time will be up."

I usually do not do posts like this but because she is a friend that is close to my heart, I have decided to reach out for her and her family for a helping hand. If you're not familiar with the March of Dimes, it is a charity walk (sort of like Relay for Life) and when you walk, "you give hope to more than half a million babies born too soon each year. The money you raise" or donate, "supports programs in your community that help moms have healthy, full-term pregnancies. And it funds research to find answers to the problems that threaten our babies." Since 1970, the March of Dimes program has raised over $2 billion to benefit babies all around the country.

If you're not in the area, like myself, and wouldn't mind donating to this organization, you may do so HERE. Not many people realize how much $5 can do for someone. If we can get everyone in just a single state to donate $5, there would be enough money to help HUNDREDS of families! So, even if you're just able to donate $5, that is perfectly fine!If you're unable to walk or donate, my dear friend and myself just ask that you give prayer to her family. They need as much strength as they can get at this point in time!

Recipe: Eggplant Mumble Pasta

*Eggplant Mumble Pasta*
Serving Size: 3
Prep Time: 10 minutes
Cook Time: 20 minutes
INGREDIENTS:

  • 1/2 box of spaghetti 
  • 1 can of corn
  • 1/2 sweet onion, sliced
  • 1 cup mushrooms, diced
  • 1/2 cup tomatoes, diced
  • 1 large eggplant, diced
  • 1 tbsp parsley (or basil)
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup olive oil

LET'S BEGIN:
  1. Boil water in a medium pot on high. Break spaghetti in half and cook in boiling water until soft.
  2. In a large saucepan, poor olive oil in and let simmer. 
  3. Once oil begins to simmer, add in eggplant, onion, corn, mushrooms, and tomatoes. Stir periodically until onions are soft.
  4. Add salt, pepper, and parsley (or basil) into eggplant mixture. Cook 6-8 more minutes.
  5. Drain spaghetti and add eggplant mixture into spaghetti pot.
  6. Serve alone or with garlic bread.

Recipe: Avocado Chicken Parmesan

*Avocado Chicken Parmesan*
Serves: 3-4
Prep Time: 10min.
Cook Time: 15min.




INGREDIENTS:
  • 2 Chicken Breast Fillets
  • 1/2 cup Flour
  • 2 Tablespoons fresh Milk
  • 2 Eggs
  • 1 1/2 Cups Dried Breadcrumbs
  • 2 Tablespoons Olive Oil
  • Cooking Spray
  • 1/2 Cup Tomato Pasta Sauce
  • 2 Avocados, sliced
  • 1/2 cup Grated Mozzarella Cheese
  • Salad Greens (to serve)

LET'S BEGIN!
  1. Place chicken breast in a clear plastic bag, between 2 sheets of plastic wrap, using a rolling pin or meat mallet pound until approx. 0.5cm thick.
  2. Place flour and breadcrumbs on two separate places and lightly whisk milk and eggs together in a shallow bowl.
  3. Coat 1 piece of chicken breast in flour (shake off excess), dip in egg mixture then coat in breadcrumbs using your fingertips pressing to secure.
  4. Place on prepared baking tray (with foil or baking paper), repeat the same process with the remaining chicken breast(s) with flour, egg, & etc.
  5. Lightly spray or brush the prepared chicken with oil, bake for 16 minutes (turn after 8 minutes to have evenly colors on breadcrumbs) in preheated 400 degree oven.
  6. Remove from oven and spread each chicken breast with 1 heaped tablespoon of pasta sauce.
  7. Arrange avocado slices over sauce and sprinkle with a decent amount of mozzarella cheese.
  8. Put prepared chicken back into oven and bake another 5-7 minutes or until golden and chicken is cooked through.
  9. Serve on top of a garden salad (I use Spinach and fresh greens) or use it as a min topping on cooked pasta.

Recipe: Baked Cheesy Chicken Penne

*BAKED CHEESY CHICKEN PENNE*

Serving Size: 4-6
Prep Time: 35min.
Cook Time: 20min.

  • 3 tablespoons of butter
  • Kosher salt & black pepper
  • .5 pound Penne Rigate
  • 1 teaspoon of olive oil
  • 2-3 boneless, skinless chicken breast
  • 1/2 cup of flour
  • 4 garlic cloves, finely minced
  • 3 cups whole milk
  • 10 ounces white or cremini mushrooms, trimmed & thinly sliced
  • 1 cup sliced oil-packed sun-dried tomatoes, drained (I used petite cut tomatoes in a can)
  • 1 1/2 cup mozzarella cheese
  • 1 1/2 cup sharp cheddar cheese
  • Cooking spray
LET'S BEGIN
  1. Preheat oven to 400 degrees. Spray baking dish.
  2. In a large pot of boiling salted water, cook pasta 3 minutes short of al dente; drain pasta and set aside.
  3. While pasta is boiling, heat oil over medium-high heat in a large skillet. Season chicken breast with salt and pepper; cook until opaque throughout (3-5 minutes per side). Halve each piece of chicken breast lengthwise, then thinly slice crosswise, into small squares.
  4. While chicken pan is still hot, toss mushrooms in with the chicken and saute until golden brown (3-5 minutes). Use a little extra olive oil if needed.
  5. In a large pot, melt butter over medium heat.
  6. Add flour and garlic; cook, whisking, 1 minute. While whisking constantly, gradually add milk; bring to a simmer. Keep whisking frequently as sauce thickens, about 1 more minute. Add mushrooms and tomatoes; cook 1 minute.
  7. Take the pot off the heat and gradually stir in mozzarella and 1/2 cup sharp cheddar cheese.
  8. Add chicken and pasta to the large pot of sauce; season with salt and pepper.
  9. Pour mixture into your baking dish & sprinkle remainder of sharp cheddar cheese on top.
  10. Bake, uncovered on middle rack, until top is golden and bubbling (about 20 minutes).

(Once your Baked Cheesy Chicken Penne is done cooking, you may add more cheese or tomatoes on top of your pasta before serving!)

Happy Spring! (Nails)


HAPPY SPRING!
I've said in my St. Patty's Day nail blog post that I used to have acrylic nails for YEARS but lately I've just been painting my own nails! I'm loving that I can change up the nail polish as often as I want to and trying different colors!

On my nails I have Wet n Wild Megablast Nail Color in 209B Candy-licious/Rose bonbon  which is the pink on all of my nails except my ring finger. This nail polish is one of my favorites in my collection! You can get away with applying one coat on your nails but I applied two because I like my colors to really stand out. Wet n Wild nail polish has a very smooth application!

On my ring finger I have a very pastel green color which is AVON Nailwear Pro Nail Enamel in N903 Jade. When I saw this color in the Avon catalog I thought it was going to be a deeper color, but when I received the bottle, it was a VERY pastel color and I suddenly thought it was going to be extremely thin... to my surprise, it wasn't and it is a very pigmented color! This polish does require two coats but that was fine with me since I do two anyway! Avon nail polish's, I found out, dry very quickly which is always nice if you need something on your nails when you're in a hurry!

I decided to use these two colors to welcome Spring because I've noticed on the runway and in magazines and on Youtube that pastel and neon colors are VERY "in" this Spring; these were the colors I had in my nail polish collection!

*REVIEW* I applied this nail polish on March 18 and today it is March 21 and the colors are JUST NOW starting to chip! It lasted me a complete 3 days! Usually my nail polish starts chipping after the first day of wearing it! I am VERY happy with these products & recommend these for everyone if you're looking for a Spring pink & green color!

Tragedy Shouldn't Make You Realize...


In the last 2 years of my life, I have encountered deaths of quite a few of my friends. Each time a person has passed away I end up looking on Facebook at the person's page and I realized that 90% of who find out about the person's death usually says, "I wish we hung out more."

I really do not understand why a fatal accident or a death makes people realize how much that person actually meant to them. Instead of saying, "I wish we hung out more," why not just hang out with them! Personally, every single opportunity I have to hang out with someone, even if I'm not THAT close to them, I take it. You don't have to be best friends with someone to go to the movies together, go out for lunch, or just hang out at one another's house and talk!

I just want everyone to realize that when someone passes, THAT day shouldn't be the day you wish you hung out with someone more than you had... WHENEVER you have the opportunity to spend time with someone in your life... TAKE IT - you never know when that time will run out. A tragic moment shouldn't have to make you realize that you want to hang out with that person. STOP taking moments for granted & learn to value them!

I lost one of my best friends, I lost acquaintances, I've lost family members, I've lost extremely close family friends, and my big brother had a near death experience. When the first death of my life happened, THAT was the moment my eyes opened. I used to be quiet, shy, and mostly kept to myself but I realized that I needed to change. People value you, people love you, and people inspire you in many ways. If you have nothing else planned for the day, why not take up an offer to hang out with someone? Why do you feel the need to make an excuse? Why do you feel like they'll be here tomorrow?

ANYTHING CAN HAPPEN
between now and tomorrow.

Learn to appreciate those who you have in your life. Time is important, every second of every minute is important. Even if my husband does NOTHING but play xbox all day, I still cherish every second with him because those are the things I miss the most when we're apart. Don't make excuses, learn to smile and appreciate the day you're given because accidents do happen and you never know when someone could be gone. There is no time to hold grudges or to be mad at someone. So what they messed up, so what you messed up, forgive and forget because I'm sure the LAST memory you want of someone is an argument. End every single day on a good note with the people you encounter.

With that being said,
Love your life, love the time you're given in a day, love the people you meet and talk to each day in your life.

My St. Patty's Day Nails!



Not many people know but I LOVE doing my nails! I'm not 100% good at it but I do enjoy doing them! I usually ALWAYS have acrylics on but because we just moved, our budget has been kinda tight so I've been doing my nails myself. Since St. Patty's Day is right around the corner, I figured I would share this themed nail polish with all of you! To be honest, I have NEVER painted my nails all one color & then left my ring finger another color... I have ALWAYS painted them the same color! But, I decided to change it up a bit!


The green on all of my nails is from the nail polish brand China Glaze in the color "Emerald Sparkle." I have always been a fan of China Glaze, their brush, the pigmentation, the smoothness, and of course, their bottle looks like O.P.I.'s bottles! ;) The green does have sparkles in the polish. It isn't VERY noticeable, but it does add sparkle to your nails. If you don't like sparkles in nail polish, then I definitely wouldn't recommend you use this color!


The gold on my ring fingers is from Nicole by O.P.I. in the color "Disco Dolls" from the line Kardashian Kolors collection. I absolutely LOVE the colors in the Kardashian Kolors collection but I do have my dislikes about the actual nail polish -- in which I will do another blog separately for that collection. The polish has VERY large glitter chunks in it and it also includes the fine sparkles. As I said about the green, if you don't like sparkles in your nail polish, then I wouldn't recommend this color is for you! But, it does add awesome detail to just your ring fingers!!


All in all, I think the green and the gold go perfectly together and it relates to St. Patrick's Day coming up! I am not Irish myself but I think it's fun to dress up for holidays, even if they don't pertain to me 100%!

[Movie Review] "Listen to Your Heart"



Every night before my husband and I go to bed we always watch a movie together. Well, since he had a long day at work, it was only me watching the movie last night. I scrolled through Netflix & found "Listen to Your Heart." 




When I read the description, 
"A struggling NYC songwriter (Kent Moran) becomes enamored with a wealthy hearing-impaired girl from Greenwich, Connecticut (Alexia Rasmussen) who tragically cannot hear the music she inspires him to write. After falling in love against the wishes of her controlling mother, Ariana becomes torn between hanging onto the shelter her controlling mother (Cybill Shepherd) provides and fighting for a love that, if given the chance, might just change her life." -Sourced from: listentoyourheartfilm.com

I knew it was a MUST watch! I clicked on the movie & was completely hooked on how everything fell into place. This wasn't just an ordinary sappy girly movie for me - it was something I could completely relate to.


My little brother is hearing impaired and so is my sister in-law so, this movie hit close to home. It reminded me of my older brother & my sister in-law. Nobody understands what it's like to be deaf, including myself. People judge, people discriminate, people will laugh at something when they have no idea what it's like to walk 5 steps in their shoes. So falling in love could feel near to impossible for someone with a disability. Growing up with a brother that's deaf & then having my sister in-law enter our family who is deaf, it made me realize that my brother isn't just the only one going through the struggle. People with hearing take MANY things for granted -- the sound of birds, the sound of a guitar, the sound of water running, the sound of a crying baby, the sound of traffic, or even the sound of rain. We go through life not realizing that there are people out there who cannot HEAR or even SEE these things happening in the world... so, just imagine if you couldn't HEAR someone tell you they love you, imagine if you cannot HEAR a song they wrote for you, imagine if you cannot HEAR their heartbeat when you lay your head down on their chest... it's the little things in life that other people cannot enjoy. So, before you say hateful things about someone who won't turn your way because they didn't hear you call their name -- think twice, they might be hearing impaired.

As for the movie, I give it 5 out of 5 stars. It was only the 3rd movie in all of my life that made my cry the way I did. It has an unexpected ending but that's what made me love it even more.

Love life. Embrace life. Never take anything for granted.

International Women's Day 2012



I don't know how many people actually know that today is "International Women's Day" but if you're reading this blog... now you do! There will be some people who just overlook what this day actually means, or they will make fun of it, but there are those who will respect all of the endeavors women have encountered throughout the years. 



I don't know how many times I've heard someone say "Women are inferior to men!" It doesn't annoy me that it is said, it annoys me that whoever is saying it has absolutely no respect for us, women. It's taken a lot for us to come to where we are now. There are still things, TO THIS VERY DAY, that women get looked at as weak, fragile, & not as "tough" as a man. For example - the military. Women weren't allowed to even be in a submarine until a few years ago. Why? Because they didn't like how close the women would be to the men in the submarine. Also, women still are not allowed to fight on the line (Infantry) in the military -- which, I'm completely fine with & will support this decision 100%. But, it's really frustrating because there have been numerous incidents where the man thought that I couldn't do something because I'm a woman... you know what....




I believe that ANY woman can do just as much as a man!! You don't have to have huge muscles, facial hair, a buzz cut, or a penis to make you a STRONG person! So, for all those guys who looked down upon women, you better watch out! I mean, for crying out-loud... people thought they would NEVER see the day that a WOMAN would run for PRESIDENT! WHY?! Is it because we have boobs or a vagina or that we MAY be blonde & don't think we have the intelligence to run a damn country?! Hahahaha! You better look twice because as far as I'm concerned, Hillary Clinton had enough BALLS to stand up against every MAN that was running for president at the time & face the challenge!!! Cheers to that!


So, with all that being said, I want ALL women to walk around today with their head held high, a smile on their face, & know that TODAY is OUR day!!

How cold-hearted can you be??

Today I was going through my Pinterest account and the 2 main categories I always click on when I sign in are: "DIY" and "My Life." Well, when I clicked on "My Life" I scrolled down about half way & came to an immediate halt when I seen this:




After I looked at this photo, I looked under it and noticed that a girl had posted it and her caption to this photo read: "hahahahahahahaha." That wasn't the reaction that made me disgusted... it was the fact that this photo had  1 "likes" and 11 "repins." For those of you who do not have a Pinterest account, "Repin" means to post this photo onto your own personal Pinterest account from another user that had posted it. One of the comments says, "Wow... that's incredibly mean" and the other comment states, "I'm laughing - and yes, I'm quite sure I'm going to hell."

The reason why this post absolutely disgusts me is for numerous reasons. The first main reason is the fact that whoever made this photo of Drake and edited it the way they did, has NO soul for those who actually may never be able to walk again. Second, I didn't even have the guts to click on the "11 repins" because I don't want to even see the faces of those who agree with this image. Third, my oldest brother was involved in a motorcycle accident last year and he is now paralyzed from the breastbone down. My brother is married, has 3 kids, was a truck driver, and always was the life of the party. My brother IS the person I look up to in my family, he's the one that has always given me the dead honest truth about everything I need his opinion on. He's the one that has made me realize that there is more to life than what meets the eye.

As for this picture that I noticed on Pinterest, it is absolutely heart breaking to know there are people out there who make fun of those who cannot walk & who may never walk again... Imagine if it were you. Imagine if YOU were the one sitting in that wheelchair. Imagine if it were YOU who realized they may never be able to run a marathon. Imagine if it were YOU who had their life change in a single second all because of an ACCIDENT. Imagine if it were YOU with children that you did EVERYTHING for and all of a sudden your "everything" is limited...
