Recipe: Pot Roast in the Slow Cooker

Slow Cooker Recipe:
*Pot Roast with Veggies*
Prep time: 20 minutes
Cook time: Approx. 6 hours

-3lb roast
-1lb of carrots (chopped)
-3 small tomatoes (or) 2 large tomatoes
-2 yellow onions
-1tsp Salt
-1 tbs Pepper
-4 tbs Italian Seasoning
-2 tbs Parsley
-1/4 cup Extra Virgin Olive Oil

  1. Put your slow cooker on high and let sit for 10 minutes
  2. Prep your roast. Pat dry. Rub salt, pepper, 1tbs parsley, and 2tbs Italian Seasoning all over.
  3. Pour Extra Virgin Olive Oil into bottom of slow cooker.
  4. Place roast inside of slow cooker and cover with lid.
  5. While your slow cooker is warming up with the roast inside, chop up your carrots, onions, and tomatoes. Throw together in a large bowl.
  6. Mix 1tbs parsley and 2tbs Italian seasoning into large bowl with vegetables. Toss together until all ingredients are evenly mixed.
  7. Pour vegetables into slow cooker with roast. Leaving top of roast exposed. Let cook on high for 4 hours then on low/medium for 1.5-2 more hours.

*WARNING* Your house will start smelling like yummy goodness after the first 2 hours of cooking!! Risk the temptation at your own pace! ;)

After your roast is all finished, cut pieces while it's still in the slow cooker. 
Add additional salt and pepper as needed.

Mission Body Rock: Before it Begins

Before it Begins

Hello everyone! My name is Lindsey, I'm 20 years old, and I created "Mission Body Rock" to take a leap and transform my body, my health, and my lifestyle. In order to do this, I became a coach for Team Beachbody!! It is a program that incorporates Shakeology, TurboFire, P90x, and many other workout programs. Every 30 days, I will post new pictures of my body, along with my current weight and measurements so that the progress will be VISIBLE. I hope all of you reading this series introduction will stick with me during this journey to help motivate me, inspire me, and help me push through! 

What would you love to accomplish?
During "Mission Body Rock" I hope to lose 50 pounds, get rid of my arm flab, strengthen my leg muscles, gain abs, and "lift" my butt. I also plan to gain healthy eating habits, religious workout routines that become a part of my every-day routine, and to feel better about myself; mentally, physically, and emotionally.

What made you realize that you need a change?
The main thing is my health. I noticed over the last few months that my asthma has gotten bad, to the point where I have to take 2 puffs of my inhaler every night before bed or I will start wheezing and coughing! Another thing is, when I look in the mirror, I feel disgusted. I don't feel happy, I don't feel proud, I feel gross. I honestly do not know how I let my body get this bad. I am the heaviest weight I've ever been in my entire life, I am completely out of shape, and I don't feel pretty anymore - even when I put on makeup. 

When were you happiest about your body?
My freshman year of high school (2006-2007) and when I got married (December 2010). I used to play volleyball, I used to be fit, I used to have amazing legs, I used to be extremely active, & I used to be religious to the gym! The way I am now... it's not ME!!! I WANT TO BE ME AGAIN!!!

Would you love to inspire others?
Of course I would! In 2010, I went to the gym EVERY single morning of the work week at 9am. I did a workout class for 1 hour and then either did cardio or lifted free weights. In 5 months time, I had lost 50lbs! So, by my wedding day, I felt AMAZING and looked GREAT! I know losing weight is possible but I also know that feeling good about yourself is even more possible!!!

How do you plan to inspire others?
I plan to keep consistent with this blog series: "Mission Body Rock" and I also plan on creating a YouTube series on my channel so people can actually WATCH the transformation that is about to take place! I really hope they'll be motivated to make a change in their life and take part of Team Beachbody!

Do you have a time frame or distant goal?
For my short term goal: by this summer (July 2012) I would really love to get rid of my belly fat. I want to be able to wear a bikini and feel good about myself! For my distant goal: I want to run a marathon. I don't care how long of a marathon, I just want to be able to say "I RAN A MARATHON" once in my life!

How do you plan on maintaining your dream?
Since I have asthma, I plan on doing cardio every single time I work out, whether it be running, jogging, an elliptical, or even a treadmill. It will not only help my asthma, but it will also help me improve my cardiovascular system so I will be able to run a marathon without passing out or getting tired!
